Ingredients

  • 6 Tablespoons mayonnaise
  • 1 Tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • ¼ cup finely chopped cilantro
  • 1 Tablespoon lime juice, freshly squeezed
  • zest from the lime
  • ¼ teaspoon black pepper

Instructions

  • Add the mayonnaise, olive oil, minced garlic, chopped cilantro, lime juice, zest of the lime, and black pepper to a small mixing bowl.
  • Using a whisk, mix well to combine. The texture should be velvety and creamy.
  • Cover and store in the refrigerator for at least 30 minutes before serving.

Notes

  • Finely chop the cilantro so that every drop has a lemony, peppery flavor and the consistency is smooth. Use a sharp knife or even a vegetable chopper to finely chop the cilantro leaves.
  • Since there's not a lot to this recipe, using fresh ingredients is key. Freshly juiced and zested lime, garlic that's just been minced, and freshly chopped cilantro adds the most robust flavor to this cilantro lime aioli.
  • Letting it sit in the refrigerator for at least 30 minutes before serving.
  • You can use an immersion blender for an extra creamy and luscious texture, but hand whisking is usually enough to achieve the velvety texture you want.
